Cooling Coconut Cardamom Chia Pudding
1 can full-fat coconut milk
2 tbsp chia seeds
½ tsp ground cardamom
1 tsp maple syrup or honey (optional)
Pinch of sea salt
Fresh mint + berries to top
Mix all ingredients in a glass jar. Chill overnight. Eat in the morning like you're on vacation in your own kitchen.
